For the Crust:
- 8 slices of bread
- 1 cup fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 6 ounces feta cheese, crumbled
- 4 ounces mozzarella cheese, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a pan over medium heat and sauté the spinach until wilted. Season with salt and pepper.
- Assemble each sandwich with a layer of mozzarella, sautéed spinach, sun-dried tomatoes, and feta cheese between two slices of bread.
- Grill each sandwich in a non-stick skillet over medium heat, pressing down with a spatula, until golden brown on both sides and cheese is melted.
