A delicious twist on the classic grilled cheese sandwich with a Mediterranean flair, featuring spinach, feta, and mozzarella.

For the Crust:
- 8 slices of whole-grain bread
- 1 cup fresh spinach leaves
- 1/2 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
Instructions
1. Prepare the Crust:
- Heat olive oil in a skillet over medium heat. Add spinach and sauté until wilted, about 2 minutes.
- Lay out 4 slices of bread. Top each with 1/4 cup of mozzarella cheese, some of the sautéed spinach, 2 tablespoons of feta cheese, and a sprinkle of oregano. Top with remaining bread slices.
- Heat a pan over medium heat. Grill sandwiches for 3-4 minutes per side until bread is golden and cheese is melted.
