Meatballs in Savory Onion Gravy

Description

Tender, herb-infused meatballs simmered in a rich and deeply flavorful onion gravy. A comforting and hearty dish perfect served over mashed potatoes or egg noodles.

For the Crust:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 2 large yellow onions, thinly sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme leaves

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic powder, salt, and pepper. Mix gently and form into 1-inch meatballs.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides, then remove from the skillet and set aside.
  3. Add the sliced onions to the same skillet. Cook for 8-10 minutes until softened and golden brown. Sprinkle the flour over the onions and cook for 1 minute, stirring constantly.
  4. Gradually pour in the beef broth and Worcestershire sauce, stirring to scrape up any browned bits from the bottom of the pan. Bring to a simmer.
  5. Return the meatballs to the skillet. Add the thyme. Cover and simmer for 15-20 minutes, until the gravy has thickened and the meatballs are cooked through. Season with additional salt and pepper if needed.
