For the Crust:

  • 1 pound carrots, peeled and halved
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • 1/4 cup pomegranate seeds
  • 1/4 cup roasted pistachios, chopped

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400Β°F (200Β°C).
  2. In a mixing bowl, toss the carrots with maple syrup, olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized. Remove, let cool slightly, then drizzle with tahini, and top with pomegranate seeds and pistachios.

Notes

You can customize the seasonings to taste.
