For the Crust:
- 1 pound carrots, peeled and halved
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons tahini
- 1/4 cup pomegranate seeds
- 1/4 cup roasted pistachios, chopped
Instructions
1. Prepare the Crust:
- Preheat the oven to 400Β°F (200Β°C).
- In a mixing bowl, toss the carrots with maple syrup, olive oil, salt, and pepper. Spread them out on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized. Remove, let cool slightly, then drizzle with tahini, and top with pomegranate seeds and pistachios.
