For the Crust:

  • 1 lb carrots, peeled and cut into 1/2-inch coins
  • 4 slices thick-cut bacon, chopped
  • 2 tbsp pure maple syrup
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 400Β°F (200Β°C).
  2. On a large baking sheet, toss the carrot coins with olive oil, salt, and pepper. Spread them in a single layer.
  3. Scatter the chopped bacon pieces evenly over the carrots.
  4. Roast for 20-25 minutes, stirring once halfway through, until the carrots are tender and the bacon is crispy.
  5. Remove from the oven and immediately drizzle with maple syrup. Toss to coat everything evenly.
  6. Transfer to a serving dish, garnish with fresh thyme, and serve warm.
