Luscious Cinnamon Streusel Muffins

Delightful muffins with a rich cinnamon streusel topping that are perfect for breakfast or a snack.

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup light brown sugar

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 375Β°F (190Β°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and 1 teaspoon of cinnamon.
  3. In a separate bowl, mix the melted butter, eggs, and milk. Combine the wet and dry ingredients until just mixed.
  4. Fill each muffin cup about two-thirds full.
  5. For the streusel topping, mix the brown sugar and remaining 1/2 teaspoon of cinnamon. Sprinkle over the muffins before baking.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
