For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1/2 cup light brown sugar
Instructions
1. Prepare the Crust:
- Preheat the oven to 375Β°F (190Β°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and 1 teaspoon of cinnamon.
- In a separate bowl, mix the melted butter, eggs, and milk. Combine the wet and dry ingredients until just mixed.
- Fill each muffin cup about two-thirds full.
- For the streusel topping, mix the brown sugar and remaining 1/2 teaspoon of cinnamon. Sprinkle over the muffins before baking.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
