For the Crust:

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • Whipped cream, for topping

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix together flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until light and fluffy, then stir in milk and vanilla extract.
  4. Gradually add the flour mixture to the wet ingredients, mixing until smooth.
  5. Pour batter into cupcake liners and bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. While the cupcakes are baking, whisk together heavy cream, sweetened condensed milk, and evaporated milk.
  7. Once cupcakes are done, let them cool slightly then poke holes in the tops with a fork.
  8. Pour the milk mixture over the cupcakes, allowing it to soak in.
  9. Chill in the refrigerator for at least 1 hour before serving.
  10. Top with whipped cream before serving.
