For the Crust:
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup sugar
- 1/3 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1 can (14 oz) sweetened condensed milk
- 1 can (12 oz) evaporated milk
- Whipped cream, for topping
Instructions
1. Prepare the Crust:
- Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
- In a bowl, mix together flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy, then stir in milk and vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing until smooth.
- Pour batter into cupcake liners and bake for 20-25 minutes or until a toothpick inserted comes out clean.
- While the cupcakes are baking, whisk together heavy cream, sweetened condensed milk, and evaporated milk.
- Once cupcakes are done, let them cool slightly then poke holes in the tops with a fork.
- Pour the milk mixture over the cupcakes, allowing it to soak in.
- Chill in the refrigerator for at least 1 hour before serving.
- Top with whipped cream before serving.
