Lemon Zucchini Bread

A moist and zesty zucchini bread with a hint of lemon, perfect for breakfast or dessert.

For the Crust:

  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup lemon juice
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon lemon zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the grated zucchini, sugar, oil, lemon juice, and eggs.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
