  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Pecorino Romano cheese
  • 1 cup panko breadcrumbs
  • 1 lemon (zested and juiced)
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/4 cup olive oil
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 375Β°F (190Β°C).
  2. In a shallow bowl, combine Pecorino Romano, panko breadcrumbs, and lemon zest.
  3. Season chicken breasts with salt and pepper. Dredge each in flour, then beaten eggs, and finally in the cheese mixture, ensuring an even coat.
  4. Heat olive oil in a large skillet over medium-high heat. Sear chicken for about 3-4 minutes on each side until golden brown.
  5. Transfer chicken to a baking dish and bake for 20 minutes, or until cooked through.
  6. In a small saucepan over medium heat, combine lemon juice and heavy cream. Cook until slightly thickened, about 5 minutes, stirring frequently.
  7. Serve chicken hot with the creamy lemon sauce drizzled over the top.
