For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1/2 cup milk
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350Β°F (175Β°C) and grease a loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, eggs, milk, lemon zest, and lemon juice.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
