For the Crust:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1/2 cup milk
- Zest of 2 lemons
- 1/4 cup fresh lemon juice
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
1. Prepare the Crust:
- Preheat your oven to 350Β°F (175Β°C) and grease a loaf pan.
- In a large bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the melted butter, eggs, milk, lemon zest, and lemon juice.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
