For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 cup shredded coconut
  • 4 oz cream cheese, softened
  • 1 egg

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the egg, lemon zest, lemon juice, and vanilla extract and mix until well combined. Stir in the flour, baking powder, and shredded coconut until a dough forms.
  4. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
  5. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
