For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 cup shredded coconut
- 4 oz cream cheese, softened
- 1 egg
Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the butter, cream cheese, granulated sugar, and brown sugar until light and fluffy.
- Add in the egg, lemon zest, lemon juice, and vanilla extract and mix until well combined. Stir in the flour, baking powder, and shredded coconut until a dough forms.
- Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
