Ingredients
Cake Base:
1 box lemon cake mix
1/3 cup vegetable oil
2 large eggs
Cheesecake Layer:
2 (8 oz) blocks cream cheese, softened
1/2 cup granulated sugar
2 large eggs
2 tablespoons all-purpose flour
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
Topping:
Powdered sugar for dusting (optional)
Instructions
1. Preheat oven to 350Β°F (177Β°C). Grease or line a 9Γ13-inch baking pan with parchment paper.
2. In a large bowl, mix lemon cake mix, oil, and eggs until combined. Press evenly into the bottom of the prepared pan.
3. In another bowl, beat cream cheese until smooth. Add sugar and beat until fluffy.
4. Mix in eggs, flour, lemon juice, lemon zest, and vanilla extract. Blend until creamy and well combined.
5. Pour the cheesecake layer over the cake base and spread evenly.
6. Bake for 35β40 minutes until the center is set and edges are lightly golden.
7. Cool completely in the pan, then refrigerate for at least 2 hours before slicing.
8. Dust with powdered sugar before serving, if desired.
Notes
For stronger citrus flavor, use Meyer lemons or double the zest.
Chilling the bars ensures clean slices and rich texture.
