Description
Keto Air Fryer Churros are low-carb, sugar-free churros with a crispy golden shell and cinnamon monkfruit coating. Air-fried in just 10 minutes, they offer classic churro flavor without the carbs.
Ingredients
¾ c almond flour, blanched ½ c coconut flour ½ tsp xanthan gum ¼ tsp salt ¼ c Lakanto Classic or Golden Monkfruit Sweetener 1 c water 2 tbsp butter ½ tsp ground cinnamon 1 tsp vanilla extract 1 large egg 2-3 tbsp melted butter (for brushing) 1 tbsp cinnamon 1 tbsp Golden Monkfruit Sweetener
Instructions
1. In a medium bowl, whisk together almond flour, coconut flour, xanthan gum, and salt. 2. In a saucepan, bring water, butter, cinnamon, monkfruit, and vanilla to a boil. Let cool for 3 minutes. 3. Pour wet mix into dry mix and stir well. Add the egg last and mix until dough forms a ball. 4. Transfer dough to a piping bag (or zip bag with corner cut). 5. Pipe 3-inch strips into air fryer basket. 6. Air fry at 330°F for 10 minutes until golden and cooked through. 7. Brush warm churros with melted butter and roll in cinnamon monkfruit mixture. 8. Serve immediately and enjoy.
Notes
Best enjoyed fresh and warm. Store leftovers in fridge up to 2 days. Reheat in air fryer for 2–3 minutes. Freeze raw piped churros to cook on demand.
