John Wayne Casserole

Description

A hearty layered casserole with ground beef, cheese, and jalapeños for a southwestern flair.


Ingredients

For the Crust:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (4 oz) green chilies, drained
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 cup biscuit baking mix
  • 1/2 cup water

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. Brown the ground beef in a skillet. Drain excess fat. Add taco seasoning and 1/2 cup water. Simmer for 5 minutes.
  3. In a bowl, mix the biscuit baking mix and 1/2 cup water to form a dough. Press dough into the bottom of a greased 9×13 inch baking dish.
  4. Layer the beef mixture on top of the biscuit dough.
  5. In a separate bowl, mix sour cream, mayonnaise, and half of the cheese. Spread this mixture over the beef layer.
  6. Top with tomatoes, green chilies, bell pepper, onion, and remaining cheese.
  7. Bake in preheated oven for 30-35 minutes or until the cheese is melted and bubbly.

Notes

You can customize the seasonings to taste.
