For the Crust:
- 4 boneless, skinless chicken breasts
- 2 fresh jalapeños, sliced
- 2 ripe peaches, sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-proof skillet over medium-high heat.
- Season chicken breasts with salt and pepper, and cook until browned on both sides, about 3-4 minutes per side.
- Add sliced peaches, jalapeños, honey, and soy sauce to the skillet.
- Transfer the skillet to the preheated oven and bake for 18-20 minutes, or until the chicken is cooked through and the sauce has thickened.
