Jalapeño Peach Chicken

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 fresh jalapeños, sliced
  • 2 ripe peaches, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-proof skillet over medium-high heat.
  3. Season chicken breasts with salt and pepper, and cook until browned on both sides, about 3-4 minutes per side.
  4. Add sliced peaches, jalapeños, honey, and soy sauce to the skillet.
  5. Transfer the skillet to the preheated oven and bake for 18-20 minutes, or until the chicken is cooked through and the sauce has thickened.
