Jalapeno Cornbread with Lime Honey Glaze

A spicy and sweet twist on traditional cornbread, topped with a tangy lime honey glaze.

For the Crust:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 2 jalapenos, chopped
  • 1/4 cup honey
  • 2 tablespoons lime juice

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Grease an 8×8 inch baking dish.
  2. In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk buttermilk, eggs, and melted butter. Stir in chopped jalapenos.
  4. Combine wet and dry ingredients until just blended. Pour into prepared baking dish.
  5. Bake for 20-25 minutes until golden brown.
  6. For the glaze, mix honey and lime juice in a small bowl. Drizzle over warm cornbread before serving.
