A spicy and sweet twist on traditional cornbread, topped with a tangy lime honey glaze.

For the Crust:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup melted butter
- 2 jalapenos, chopped
- 1/4 cup honey
- 2 tablespoons lime juice
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Grease an 8×8 inch baking dish.
- In a large bowl, mix together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk buttermilk, eggs, and melted butter. Stir in chopped jalapenos.
- Combine wet and dry ingredients until just blended. Pour into prepared baking dish.
- Bake for 20-25 minutes until golden brown.
- For the glaze, mix honey and lime juice in a small bowl. Drizzle over warm cornbread before serving.
