For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1 1/4 cups sugar, divided
- 24 oz cream cheese, softened
- 3 large eggs
- 1 tbsp lemon zest
- 1/4 cup lemon juice
- 1 tsp vanilla extract
- 1 1/2 cups sliced strawberries
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (160Β°C). Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each. Stir in lemon zest, lemon juice, and vanilla extract.
- Pour cream cheese mixture over crust. Bake for 30 minutes or until center is just set. Let cool before topping with sliced strawberries. Refrigerate for at least 4 hours before serving.
