For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1 1/4 cups sugar, divided
  • 24 oz cream cheese, softened
  • 3 large eggs
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • 1 1/2 cups sliced strawberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F (160Β°C). Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press mixture into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and remaining sugar until smooth. Add eggs one at a time, mixing well after each. Stir in lemon zest, lemon juice, and vanilla extract.
  3. Pour cream cheese mixture over crust. Bake for 30 minutes or until center is just set. Let cool before topping with sliced strawberries. Refrigerate for at least 4 hours before serving.

Notes

You can customize the seasonings to taste.
