Irresistible Boston Cream Pie Cupcakes

Delicious cupcakes inspired by the classic Boston Cream Pie, filled with a smooth vanilla pastry cream and topped with a rich chocolate ganache.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup semisweet chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the creamed mixture alternately with milk, starting and ending with the flour mixture.
  4. Divide batter evenly among cupcake liners and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
  5. For the filling, whisk together heavy cream and vanilla pudding mix until smooth. Chill until ready to use.
  6. For the ganache, heat heavy cream until steaming, pour over chocolate chips, and let sit for 2 minutes. Stir until smooth and glossy.
  7. Once cupcakes are cool, hollow out the center of each and fill with pastry cream. Drizzle with chocolate ganache.

Notes

You can customize the seasonings to taste.
