Delicious cupcakes inspired by the classic Boston Cream Pie, filled with a smooth vanilla pastry cream and topped with a rich chocolate ganache.

For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/4 cup semisweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
- In a bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the creamed mixture alternately with milk, starting and ending with the flour mixture.
- Divide batter evenly among cupcake liners and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
- For the filling, whisk together heavy cream and vanilla pudding mix until smooth. Chill until ready to use.
- For the ganache, heat heavy cream until steaming, pour over chocolate chips, and let sit for 2 minutes. Stir until smooth and glossy.
- Once cupcakes are cool, hollow out the center of each and fill with pastry cream. Drizzle with chocolate ganache.
