For the Crust:
- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 cup chopped walnuts
- 1 teaspoon baking soda
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup heavy cream for topping
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and grease a 9Γ13 inch baking pan.
- In a bowl, cream together butter and sugar until light and fluffy, then beat in eggs and vanilla.
- In a separate bowl, mix mashed bananas, flour, baking soda, and walnuts. Combine with the creamed mixture and stir in sour cream until just combined.
- Pour batter into prepared baking pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
- Once the cake is cooled, whip heavy cream until stiff peaks form and spread over the top of the cake before serving.
