For the Crust:

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream for topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and grease a 9Γ—13 inch baking pan.
  2. In a bowl, cream together butter and sugar until light and fluffy, then beat in eggs and vanilla.
  3. In a separate bowl, mix mashed bananas, flour, baking soda, and walnuts. Combine with the creamed mixture and stir in sour cream until just combined.
  4. Pour batter into prepared baking pan and bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  5. Once the cake is cooled, whip heavy cream until stiff peaks form and spread over the top of the cake before serving.
