For the Crust:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup mini marshmallows
- 1/2 cup heavy cream
- 1/2 cup chocolate chips
Instructions
1. Prepare the Crust:
- Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
- In a bowl, mix flour, cocoa powder, sugar, baking soda, and salt.
- In another bowl, blend melted butter, eggs, vanilla extract, and buttermilk. Combine with dry ingredients until smooth.
- Fill cupcake liners 3/4 full with batter. Bake for 18-20 minutes. Let cool completely.
- For filling: melt marshmallows in a double boiler until smooth.
- Core cupcakes and fill with melted marshmallows.
- For glaze: heat cream until simmering, then pour over chocolate chips. Stir until smooth.
- Dip cupcake tops in the glaze. Allow to set.
