Delicious homemade chocolate cupcakes with a creamy filling and a glossy chocolate glaze.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup mini marshmallows
  • 1/2 cup heavy cream
  • 1/2 cup chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix flour, cocoa powder, sugar, baking soda, and salt.
  3. In another bowl, blend melted butter, eggs, vanilla extract, and buttermilk. Combine with dry ingredients until smooth.
  4. Fill cupcake liners 3/4 full with batter. Bake for 18-20 minutes. Let cool completely.
  5. For filling: melt marshmallows in a double boiler until smooth.
  6. Core cupcakes and fill with melted marshmallows.
  7. For glaze: heat cream until simmering, then pour over chocolate chips. Stir until smooth.
  8. Dip cupcake tops in the glaze. Allow to set.

Notes

You can customize the seasonings to taste.
