For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/3 cup honey
- 1/4 cup sriracha sauce
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 4 cups cooked white rice
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 2 green onions, sliced
- 1/2 cup mayonnaise
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
Instructions
1. Prepare the Crust:
- In a bowl, whisk together honey, sriracha, soy sauce, and minced garlic. Add the chicken pieces and toss to coat. Marinate for at least 15 minutes.
- Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, stirring occasionally, until cooked through and the sauce has thickened into a glaze.
- While the chicken cooks, prepare the creamy lime sauce by whisking together the mayonnaise, fresh lime juice, and lime zest in a small bowl.
- To assemble the bowls, divide the cooked rice among four bowls. Top with the honey sriracha chicken, shredded carrots, and sliced cucumber.
- Drizzle the creamy lime sauce over each bowl and garnish with sliced green onions. Serve immediately.
