For the Crust:
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 1/4 cup sugar
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup key lime juice
- 1 cup heavy cream
- Key lime zest for garnish
Instructions
1. Prepare the Crust:
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until the texture is sandy.
- Press the crumb mixture firmly into the bottom of mini tart pans to form a crust.
- In a separate bowl, whisk together sweetened condensed milk and key lime juice until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold into the lime mixture.
- Pour the lime mixture into the prepared crusts and refrigerate for at least 2 hours or until set.
- Garnish with key lime zest before serving.
