For the Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 can (21 oz) cherry pie filling
- 1 cup whipped cream
Instructions
1. Prepare the Crust:
- Preheat the oven to 350Β°F (175Β°C). Mix chocolate cookie crumbs and melted butter in a medium bowl. Press evenly into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese, sugar, cocoa, and vanilla until smooth. Add eggs one at a time, mixing on low speed until just blended. Pour over crust.
- Bake for 45 minutes or until center is set. Cool completely. Refrigerate for 4 hours. Top with cherry pie filling and whipped cream before serving.
