For the Crust:

  • 1 pound chicken breast, diced
  • 4 medium potatoes, peeled and cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 tablespoons chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautΓ© until fragrant.
  2. Add chicken pieces and cook until they are browned on all sides.
  3. Stir in potatoes, carrots, celery, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.
  4. Stir in heavy cream and fresh parsley, cooking for an additional 5 minutes. Adjust seasoning if necessary.
  5. Serve hot and enjoy.
