For the Crust:
- 1 pound chicken breast, diced
- 4 medium potatoes, peeled and cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 tablespoons chopped fresh parsley
Instructions
1. Prepare the Crust:
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sautΓ© until fragrant.
- Add chicken pieces and cook until they are browned on all sides.
- Stir in potatoes, carrots, celery, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.
- Stir in heavy cream and fresh parsley, cooking for an additional 5 minutes. Adjust seasoning if necessary.
