For the Crust:
- 2 boneless, skinless chicken breasts
- 2 tablespoons sesame oil
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced cucumbers
- 1/4 cup sesame seeds
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
Instructions
1. Prepare the Crust:
- Marinate chicken breasts in 1 tablespoon sesame oil and 1 tablespoon soy sauce for 30 minutes.
- Grill the chicken over medium-high heat for 6-8 minutes per side until fully cooked.
- In a large bowl, combine salad greens, cherry tomatoes, cucumbers, and sesame seeds.
- Mix the remaining sesame oil, soy sauce, rice vinegar, and honey to create a dressing.
- Slice the grilled chicken and place it over the salad, then drizzle with the dressing.
