Grilled Sesame Chicken Salad

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons sesame oil
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced cucumbers
  • 1/4 cup sesame seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey

Instructions

1. Prepare the Crust:

  1. Marinate chicken breasts in 1 tablespoon sesame oil and 1 tablespoon soy sauce for 30 minutes.
  2. Grill the chicken over medium-high heat for 6-8 minutes per side until fully cooked.
  3. In a large bowl, combine salad greens, cherry tomatoes, cucumbers, and sesame seeds.
  4. Mix the remaining sesame oil, soy sauce, rice vinegar, and honey to create a dressing.
  5. Slice the grilled chicken and place it over the salad, then drizzle with the dressing.

You can customize the seasonings to taste.
