For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 avocados, diced
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season with salt and pepper.
  3. Grill the chicken for 6-7 minutes on each side until fully cooked, then let it rest for a few minutes before slicing.
  4. In a large bowl, combine the salad greens, cherry tomatoes, red onion, and avocado.
  5. Add the sliced chicken to the salad, drizzle with lime juice, and toss to combine.
  6. Serve immediately.
