For the Crust:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 2 teaspoons dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1/4 cup chopped fresh parsley
- 1 cucumber, grated
- 1 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400Β°F (200Β°C).
- In a bowl, mix ground chicken, breadcrumbs, garlic, oregano, salt, pepper, egg, and parsley. Form into meatballs.
- Place meatballs on a baking sheet and bake for 20 minutes, or until cooked through.
- For the tzatziki sauce, squeeze excess water from grated cucumber. Combine cucumber with yogurt, olive oil, lemon juice, and salt in a bowl.
- Serve meatballs with tzatziki sauce.
