For the Crust:

  • 12 small red potatoes
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425Β°F (220Β°C). Boil potatoes in salted water until fork-tender, about 15 minutes.
  2. Drain and place on a baking sheet. Gently smash each potato with a fork, drizzle with olive oil, and season with salt and pepper.
  3. Bake for 25 minutes until crispy. Mix sour cream, parsley, and chives for the sauce. Serve potatoes with sauce on top.
