For the Crust:
- 12 small red potatoes
- 3 tablespoons olive oil
- Salt and pepper to taste
- 1/2 cup sour cream
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
Instructions
1. Prepare the Crust:
- Preheat oven to 425Β°F (220Β°C). Boil potatoes in salted water until fork-tender, about 15 minutes.
- Drain and place on a baking sheet. Gently smash each potato with a fork, drizzle with olive oil, and season with salt and pepper.
- Bake for 25 minutes until crispy. Mix sour cream, parsley, and chives for the sauce. Serve potatoes with sauce on top.
