Classic Gingerbread Man Christmas Cookies

A festive and spiced holiday cookie, perfect for decorating and leaving out for Santa.

For the Crust:

  • 3 cups all-purpose flour
  • 3/4 cup dark brown sugar, packed
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3/4 tsp baking soda
  • 12 tbsp unsalted butter, softened
  • 3/4 cup molasses
  • 2 tbsp milk
  • 1 large egg

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together the flour, brown sugar, ginger, cinnamon, cloves, salt, and baking soda.
  2. Add the softened butter and mix with an electric mixer on low speed until the mixture looks sandy.
  3. In a separate bowl, whisk together the molasses, milk, and egg. Pour into the dry ingredients and mix until a soft dough forms.
  4. Divide the dough in half, shape into discs, wrap in plastic, and chill for at least 3 hours or overnight.
  5. Preheat oven to 350Β°F (175Β°C). Roll out one disc of dough on a floured surface to 1/4-inch thickness. Cut with a gingerbread man cookie cutter.
  6. Place shapes on a parchment-lined baking sheet. Bake for 8-10 minutes, or until the edges are just set. Cool completely before decorating.

Notes

You can customize the seasonings to taste.
