A festive and spiced holiday cookie, perfect for decorating and leaving out for Santa.

For the Crust:
- 3 cups all-purpose flour
- 3/4 cup dark brown sugar, packed
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 3/4 tsp baking soda
- 12 tbsp unsalted butter, softened
- 3/4 cup molasses
- 2 tbsp milk
- 1 large egg
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together the flour, brown sugar, ginger, cinnamon, cloves, salt, and baking soda.
- Add the softened butter and mix with an electric mixer on low speed until the mixture looks sandy.
- In a separate bowl, whisk together the molasses, milk, and egg. Pour into the dry ingredients and mix until a soft dough forms.
- Divide the dough in half, shape into discs, wrap in plastic, and chill for at least 3 hours or overnight.
- Preheat oven to 350Β°F (175Β°C). Roll out one disc of dough on a floured surface to 1/4-inch thickness. Cut with a gingerbread man cookie cutter.
- Place shapes on a parchment-lined baking sheet. Bake for 8-10 minutes, or until the edges are just set. Cool completely before decorating.
