For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 large eggs
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup sweetened flaked coconut
- 1 cup chopped pecans
- 1/2 cup butter
- 1 cup evaporated milk
- 1 cup brown sugar
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa, baking soda, and salt. Add buttermilk, eggs, oil, and vanilla. Beat until smooth. Stir in boiling water and pour batter into prepared pans.
- Bake for 30-35 minutes. Meanwhile, to make frosting, bring coconut, pecans, butter, evaporated milk, and brown sugar to a boil. Stir constantly for 12 minutes, until thickened. Let cool slightly. Spread on cooled cakes.
