For the Crust:
- 4 chicken thighs
- 2 cups baby potatoes, halved

- Fresh parsley, chopped, for garnish
Instructions
1. Prepare the Crust:
- Preheat your oven to 400Β°F (200Β°C).
- In a large bowl, combine olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper. Mix well.
- Add the chicken thighs and potatoes to the bowl, and toss until coated. Arrange them on a baking sheet.
- Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh parsley before serving.
