Garlic Parmesan Chicken and Potatoes

For the Crust:

  • 4 chicken thighs
  • 2 cups baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

1. Prepare the Crust:

  1. Preheat your oven to 400Β°F (200Β°C).
  2. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper. Mix well.
  3. Add the chicken thighs and potatoes to the bowl, and toss until coated. Arrange them on a baking sheet.
  4. Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. Garnish with fresh parsley before serving.
