For the Crust:
- 4 beef rib chops (1 inch thick)
- 1/2 cup grated parmesan cheese
- 2 tbsp fresh parsley, chopped
- 4 cloves garlic, minced
- 1 tsp paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- 4 large russet potatoes, thinly sliced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 small onion, thinly sliced
- 2 tbsp butter
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F (190Β°C). Grease a 9Γ13 inch baking dish.
- For the potatoes: Layer the sliced potatoes and onions in the prepared dish. Dot with butter and pour the heavy cream over the top. Season with salt and pepper. Cover with foil and bake for 30 minutes.
- Meanwhile, prepare the chops. In a bowl, combine the parmesan cheese, parsley, minced garlic, paprika, salt, and pepper.
- Pat the beef chops dry and press the parmesan mixture firmly onto both sides of each chop.
- Heat olive oil in a large skillet over medium-high heat. Sear the chops for 3-4 minutes per side, until a golden brown crust forms.
- Remove the potatoes from the oven, uncover, and top with the cheddar and mozzarella cheeses. Place the seared beef chops on top of the cheesy potatoes.
- Return the dish to the oven, uncovered, and bake for 15-20 minutes, or until the potatoes are tender and the chops reach your desired doneness. Let rest for 5 minutes before serving.
