For the Crust:

  • 2 chicken breasts, diced
  • 1 tablespoon olive oil
  • 2 tablespoons garlic, minced
  • 1 tablespoon Cajun seasoning
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 12 oz penne pasta
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet over medium heat, add olive oil and butter. Add the diced chicken and cook until browned.
  3. Add the minced garlic and Cajun seasoning to the chicken, stirring for 1-2 minutes until fragrant. Then, pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until the sauce thickens.
  4. Add the cooked pasta to the skillet and mix until well coated. Season with salt and pepper.
  5. Garnish with freshly chopped parsley before serving.
