For the Crust:
- 2 chicken breasts, diced
- 1 tablespoon olive oil
- 2 tablespoons garlic, minced
- 1 tablespoon Cajun seasoning
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 12 oz penne pasta
- Salt and pepper to taste
- 2 tablespoons butter
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet over medium heat, add olive oil and butter. Add the diced chicken and cook until browned.
- Add the minced garlic and Cajun seasoning to the chicken, stirring for 1-2 minutes until fragrant. Then, pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until the sauce thickens.
- Add the cooked pasta to the skillet and mix until well coated. Season with salt and pepper.
- Garnish with freshly chopped parsley before serving.
