Fried Pineapple with Coconut Crust

A tropical dessert featuring sweet pineapple slices fried to perfection with a crispy coconut crust.

For the Crust:

  • 1 ripe pineapple, peeled and cored
  • 1 cup shredded coconut
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 cup sugar

Instructions

1. Prepare the Crust:

  1. Slice the pineapple into rings about 1/2 inch thick.
  2. In a shallow dish, mix the shredded coconut and sugar. Place the flour and beaten eggs in separate shallow dishes.
  3. Dredge each pineapple ring in flour, dip in beaten eggs, and coat with the coconut mixture. Fry the coated pineapple rings in a skillet over medium heat until golden brown on each side.
