Description
Fresh Raspberry Tiramisu is a bright and fruity take on a traditional Italian dessert. It features layers of mascarpone cream, fresh raspberries, and coffee-soaked ladyfingers. Light, creamy, and bursting with berry flavor.
Ingredients
2 cups fresh raspberries
1 cup raspberry jam (seedless preferred)
1 tablespoon lemon juice
1 1/2 cups brewed espresso or strong coffee, cooled
24 ladyfinger cookies (Savoiardi)
16 oz mascarpone cheese, softened
1 cup heavy cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
Powdered sugar and fresh raspberries for garnish (optional)
Instructions
1. In a bowl, mix raspberry jam with lemon juice until smooth. Set aside.
2. In another bowl, whip heavy cream until stiff peaks form. In a separate bowl, beat mascarpone, sugar, and vanilla until smooth.
3. Gently fold the whipped cream into the mascarpone mixture to create the filling.
4. Quickly dip ladyfingers into cooled coffee and arrange in a single layer in a 9×9-inch dish.
5. Spread a layer of the mascarpone filling over the ladyfingers. Spoon some raspberry jam mixture and fresh raspberries on top.
6. Repeat with a second layer of dipped ladyfingers, more mascarpone filling, and remaining raspberry topping.
7. Smooth the top and cover. Chill in the refrigerator for at least 4 hours or overnight.
8. Before serving, dust with powdered sugar and garnish with fresh raspberries if desired.
Notes
Use chilled whipped cream for best texture.
Don’t soak ladyfingers too long or they’ll become mushy.
Fresh Raspberry Tiramisu tastes best after a full overnight chill.
