For the Crust:

  • 12 ounces cheese ravioli
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Cook the ravioli according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add asparagus and cherry tomatoes to the skillet, season with salt and pepper, and cook until asparagus is tender-crisp, about 5-7 minutes.
  4. Add the cooked ravioli to the skillet, toss gently to combine with the vegetables, and heat through.
  5. Sprinkle with grated Parmesan cheese and garnish with fresh basil leaves before serving.
