French Onion Stuffed Potatoes

A delightful dish combining the rich flavors of French onion soup with comforting baked potatoes.

For the Crust:

  • 4 large baking potatoes
  • 3 tablespoons butter
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1 cup beef broth
  • 1 cup grated Gruyere cheese

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Pierce potatoes with a fork, bake for about 1 hour or until tender.
  2. In a skillet, melt butter over medium heat. Add onions and sugar, cook until caramelized, about 15 minutes. Add beef broth and let simmer until reduced.
  3. Cut a slit in each potato, scoop out some flesh, and mix it with caramelized onions. Fill potatoes with the mixture. Top with cheese and bake for another 15 minutes until cheese is bubbly.

You can customize the seasonings to taste.
