For the Crust:
- 4 beef short ribs
- 2 large onions, thinly sliced
- 3 cups beef broth
- 2 tablespoons olive oil
- 4 slices of rustic bread
- 1 cup grated Gruyere cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (160Β°C). In a large oven-safe pot, heat olive oil over medium-high heat. Season short ribs with salt and pepper, then sear on all sides until browned. Remove from pot and set aside.
- In the same pot, add sliced onions and cook until caramelized. Add beef broth and bring to a simmer. Return short ribs to the pot, cover, and transfer to the oven. Cook for 3 hours or until ribs are tender.
- Before serving, toast slices of bread and top with grated Gruyere cheese. Place under the broiler until the cheese is bubbly and golden. Serve the short ribs with the cheese toast.
