French Onion Meatloaf with Melted Swiss Cheese Slow Cooker Style

A comforting twist on classic meatloaf, infused with the rich, savory flavor of French onion soup and topped with melted Swiss cheese, all made effortlessly in your slow cooker.

For the Crust:

  • 2 lbs ground beef
  • 1 packet (1 oz) dry French onion soup mix
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 tsp black pepper
  • 2 cups beef broth
  • 2 large yellow onions, thinly sliced
  • 4 slices Swiss cheese

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the ground beef, dry soup mix, breadcrumbs, eggs, milk, Parmesan cheese, and black pepper. Mix until just combined, being careful not to overwork the meat.
  2. Shape the mixture into a loaf shape and place it in the center of a 6-quart slow cooker. Pour the beef broth around the sides of the meatloaf. Scatter the sliced onions over the top and around the loaf.
  3. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the internal temperature reaches 160Β°F (71Β°C).
  4. In the last 10 minutes of cooking, place the slices of Swiss cheese on top of the meatloaf, cover, and let melt. Carefully remove the meatloaf from the slow cooker, let it rest for 10 minutes, then slice and serve with the onions and juices from the pot.

Notes

You can customize the seasonings to taste.
