For the Crust:
- 3 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup chopped fresh basil (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- In a bowl, mix breadcrumbs, minced garlic, oregano, salt, and pepper.
- Layer half of the zucchini slices in the baking dish. Sprinkle with half of the breadcrumb mixture, half of the Parmesan, and half of the mozzarella. Repeat the layers.
- Drizzle olive oil over the top layer. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh basil if desired. Serve warm.
