A simple and flavorful zucchini bake layered with Parmesan and mozzarella cheese, perfect for a quick weeknight dinner.

For the Crust:

  • 3 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh basil (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. In a bowl, mix breadcrumbs, minced garlic, oregano, salt, and pepper.
  3. Layer half of the zucchini slices in the baking dish. Sprinkle with half of the breadcrumb mixture, half of the Parmesan, and half of the mozzarella. Repeat the layers.
  4. Drizzle olive oil over the top layer. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  5. Garnish with fresh basil if desired. Serve warm.
