For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 jalapeno, diced (seeds removed for less heat)
  • 1 lime, juiced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Add chicken breasts, chicken broth, jalapeno, onion, garlic, cumin, chili powder, salt, and pepper to the Instant Pot.
  2. Close the lid and set the Instant Pot to Manual High Pressure for 15 minutes.
  3. Once done, quick release the pressure. Shred the chicken with two forks, then stir in lime juice.
  4. Serve hot, garnished with fresh cilantro.
