For the Crust:
- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 jalapeno, diced (seeds removed for less heat)
- 1 lime, juiced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Add chicken breasts, chicken broth, jalapeno, onion, garlic, cumin, chili powder, salt, and pepper to the Instant Pot.
- Close the lid and set the Instant Pot to Manual High Pressure for 15 minutes.
- Once done, quick release the pressure. Shred the chicken with two forks, then stir in lime juice.
- Serve hot, garnished with fresh cilantro.
