A delicious homemade version of classic Samoa cookies combining chocolate, caramel, and toasted coconut.

For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 cup shredded coconut, toasted
- 20 caramels, unwrapped
- 2 tablespoons milk
- 1 cup semisweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the butter and sugar until light and fluffy. Gradually blend in the flour until a dough forms. Roll out and cut into circles, then bake for 10-12 minutes.
- Melt caramel with milk in a saucepan over medium heat. Stir in the toasted coconut, then spread the mixture on the cooled cookie bases. Once set, dip the bottoms in melted chocolate and drizzle chocolate on top.
