Description
A decadent no-bake cheesecake with a buttery graham cracker crust, a rich cream cheese filling studded with chocolate chips, and a drizzle of salted caramel sauce.

For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 16 oz (2 packages) cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup mini chocolate chips
- 1/2 cup salted caramel sauce, plus more for topping
- 1/2 tsp flaky sea salt for garnish
Instructions
1. Prepare the Crust:
- Make the crust: In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9-inch springform pan. Chill for 15 minutes.
- Make the filling: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth and creamy. In a separate bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until combined. Fold in the chocolate chips and 1/2 cup of caramel sauce.
- Assemble: Pour the filling over the chilled crust and spread it evenly. Drizzle additional caramel sauce on top and swirl with a knife. Refrigerate for at least 4 hours, or until set.
- Serve: Before serving, garnish with a final drizzle of caramel and a sprinkle of flaky sea salt. Slice and enjoy.
