Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped nuts

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease an 8Γ—8 inch baking pan.
  2. In a large bowl, whisk together the melted butter, brown sugar, and maple syrup until well combined.
  3. Add the egg and vanilla extract, then stir in the pumpkin puree until smooth.
  4. In another bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chopped nuts if using.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool completely in the pan before cutting into squares.
