For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 can (20 oz) crushed pineapple, drained
- 1 cup whipped topping
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F (165Β°C). Mix graham cracker crumbs and melted butter in a bowl until combined.
- Press the mixture into the bottom of a 9-inch springform pan to form a crust.
- In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing until well combined.
- Fold in the drained crushed pineapple, then pour the mixture over the crust in the pan.
- Bake for 30-35 minutes or until the center is set. Allow to cool at room temperature, then refrigerate for at least 4 hours.
- Top with whipped topping before serving, and garnish with pineapple slices if desired.
