Easy Pineapple Heaven Cheesecake

A tropical twist on the classic cheesecake with a refreshing pineapple flavor, perfect for summer gatherings.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup whipped topping

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F (165Β°C). Mix graham cracker crumbs and melted butter in a bowl until combined.
  2. Press the mixture into the bottom of a 9-inch springform pan to form a crust.
  3. In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing until well combined.
  4. Fold in the drained crushed pineapple, then pour the mixture over the crust in the pan.
  5. Bake for 30-35 minutes or until the center is set. Allow to cool at room temperature, then refrigerate for at least 4 hours.
  6. Top with whipped topping before serving, and garnish with pineapple slices if desired.
