For the Crust:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
Instructions
1. Prepare the Crust:
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes.
- Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until internal temperature reaches 165°F.
- For the tzatziki, mix Greek yogurt, grated cucumber, dill, and mint in a bowl. Chill until ready to serve.
- Serve grilled chicken with tzatziki sauce and optional sides like pita bread or a Greek salad.
