For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken and coat well. Marinate for at least 30 minutes.
  2. Preheat grill or skillet over medium-high heat. Cook chicken for 6-7 minutes per side or until internal temperature reaches 165°F.
  3. For the tzatziki, mix Greek yogurt, grated cucumber, dill, and mint in a bowl. Chill until ready to serve.
  4. Serve grilled chicken with tzatziki sauce and optional sides like pita bread or a Greek salad.
