For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce

Instructions

1. Prepare the Crust:

  1. In a bowl, toss chicken cubes with olive oil, oregano, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook chicken for 6-8 minutes until fully cooked.
  3. Assemble bowls by dividing quinoa, chicken, tomatoes, cucumber, red onion, olives, and feta cheese among four servings.
  4. Drizzle with tzatziki sauce before serving.
