For the Crust:
- 1 lb potato gnocchi
- 1 lb shrimp, peeled and deveined
- 1/2 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil. Cook gnocchi according to package instructions, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
- In the same skillet, add garlic and sun-dried tomatoes. SautΓ© for 1-2 minutes until fragrant.
- Pour in heavy cream and stir in Parmesan cheese. Simmer for 3-4 minutes until the sauce thickens slightly.
- Return shrimp and gnocchi to the skillet. Toss to coat in the sauce and heat through. Season with Italian seasoning, salt, and pepper.
- Garnish with fresh basil before serving.
