For the Crust:

  • 1 lb potato gnocchi
  • 1 lb shrimp, peeled and deveined
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Bring a large pot of salted water to a boil. Cook gnocchi according to package instructions, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add shrimp and cook until pink, about 2-3 minutes per side. Remove shrimp and set aside.
  3. In the same skillet, add garlic and sun-dried tomatoes. SautΓ© for 1-2 minutes until fragrant.
  4. Pour in heavy cream and stir in Parmesan cheese. Simmer for 3-4 minutes until the sauce thickens slightly.
  5. Return shrimp and gnocchi to the skillet. Toss to coat in the sauce and heat through. Season with Italian seasoning, salt, and pepper.
  6. Garnish with fresh basil before serving.

You can customize the seasonings to taste.
