For the Crust:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup long-grain white rice
- 2 cups chicken broth
- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
1. Prepare the Crust:
- In a bowl, toss chicken pieces with olive oil, paprika, garlic powder, salt, and black pepper.
- Heat a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sautΓ© for 30 seconds. Add rice and stir to coat with the garlic.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-18 minutes until rice is tender.
- Stir in parmesan cheese and parsley. Return chicken to the skillet and mix gently. Serve warm.
