Easy Blueberry Velvet Cheesecake

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tablespoons sugar
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup blueberry preserves or fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 325°F (165°C). Mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar in a small bowl. Press mixture firmly into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese, 1 cup of sugar, and vanilla extract until smooth. Add eggs, one at a time, beating just until blended after each addition.
  3. Pour the cream cheese mixture over the crust. Dollop blueberry preserves over the top and gently swirl it with a knife to create a marbled effect. Bake for 30 minutes or until the center is almost set. Allow to cool, then refrigerate for at least 4 hours before serving.
